Taylor was awesomely friendly, totally took care of us. Had a great time and was truly delicious. Next time what? I'm not on a flight layover will have some of the paella. Looked like the best thing here! Ooh also the drinks are great, clever and fun!
Botellon reopens in downtown Denver, serving reminiscent and imaginative tapas. Each plate is meant to share. I recommend the pulpo (octopus) and burrata.
Potatoes Bravas is a classic. Everywhere in Spain that serves tapas is going to have it on the menu. The key for any good patatas bravas is in the mayo and ketchup. At Botellon, that extra level of care shines in the anchovy mayo and the house made ketchup. It’s not unheard of in Spain that the condiments come from bottles, branded with capital letter names that we all know and love, although most have the spicy ketchup that is associated with the plate. Potatoes bravas, in its simplicity and ubiquity, appeals to all and Botellon delivers on a staple. The potatoes have crisp edges and soft insides. The sauces are delicious, elevated, but familiar.
The burrata is fantastic. The crusty bread is freshly made, just kissed with char so the smoke and crunch are balanced by the soft center. Burrata is now pretty common on any menu. Botellon does something delicious with a sweet butternut squash soup. The combination gives a fantastic richness when the creamiest parts of the mozz ball mixes with the delicate soup. The toasted and seasoned pumpkin seeds offer another texture that is very welcome in the soft dish.
Their broccolini is also fantastic, with the sweet sherry reduction and crispy garlic bits. Equally green and satisfying, with crunchy bits of jamon for that extra umami and texture.
The pulpo, the octopus is a highlight of the menu and for good reason. The octopus has been deeply seasoned, making for a wonderful experience all together. With a charred lemon squeezed on top, it’s fresh, meaty, tender, and satisfying. The long beans are darkened, their fibrous pieces cut into manageable sides. Wafer thin shaving of raw fennel accompany the plate along with salty, crunchy fried capers. I love capers in most seafood dishes, and the extra care from frying the little nuggets are highly worthwhile.
The beans are mashed, hearty, and delicious. When the combination of all parts are put in one mouthful the experience is truly wondrous. Each piece has a unique texture, from the toughness of the long bean, the mush of the white bean mash, the crispy capers and crunchy fennel. All of those elements work to compliment the octopus as the star of the plate. It is really fantastic.
The scallops and jamon are another highlight dish. Here is a take on surf and turf that I haven’t seen before. Where the octopus might be a complex but restrained, technical but approachable, the scallops and jamon are explosions of flavor. The jamon is salty and familiar, I love jamon and this quality is no joke. The scallops are sweet, sauteed with perfect golden edges. All of this is drenched in a butter, lemon, and cayenne sauce that is absolutely stunning in its balance of tart, fat, and spice. The mushrooms add another texture and canvas for little pockets of sauce caught by the caps.
I also had a few drinks, the Smokey and the Bandit is a rendition of an old-fashioned. The bourbon and Lapsang tea were a fantastic combination. Topped with a real maraschino cherry gave a touch of sweet to the smoke.
A Date You Won’t Fig-et. The fig infused brandy is amazing, the drink is rum is not too sweet, not too tangy.
The Deja Brew is a classic espresso martini with the orange peel adding a twist.
The I-Need-An-Adult is very similar to a spicy margarita, with a beautiful pink color from the hibiscus tea and the delicious spicy salt rim.
My time in Botellon was impeccable from start to finish. The warm environment from the staff fit well in the beautifully decorated dinning room. The open kitchen shows an efficient and coordinated brigade in the kitchen.
Excellent food, amazing prices, fantastic music
Botellón is a welcome addition of culture and class to the Larimer block of town. Boasting amazing quality of food, with large portions for tapas. The staff/servers know the menu and the appetite with suggestions and services. Botellón is a must have for any date night.
BOTELLÓN SPANISH TAPAS & WINE
We recently tried a newer tapas restaurant in uptown near the intersection of 17th and Franklin.
Go for the paella! We tried the non-seafood andouille sausage version, and it was amazing! They market the three choices of paella as entrees for two. It is quite large, but if you didn't have very many appetizers it could definitely be one person's main course. Taking up to 30 minutes to prepare, order that first and then think about cocktails and small plates.
Definitely say yes to the complimentary grilled bread, served with olive oil and large chunks of sea salt!
For the more traditional small plates, we tried the pollo con chorizo, and the pulpo (octopus). The chicken was good. The octopus was a very generous serving, and cooked to perfection! It had the best texture I have ever eaten! I hope that they expand their menu and offer the octopus with other flavors, as I don't think the chorizo helped, and almost hindered the dish.
We each tried a glass of sangria, red and white, and were not overly excited about either. Next time I will imbibe from their fun selection of Spanish wines.
The service was very good, and the atmosphere was very laid-back, rustic Coloradan.
This will be a great hangout place in the warmer months. I also hope they add a happy hour menu!

The sourdough bread that came with the Jamon is worth ordering the appetizer itself. I first thought about spreading on the fig jam but, surprised to find out that adding it to the sourdough and with the h rounded up the taste in one bite.
The other tapas we ordered were (ok, it just is the right term to describe it) delicious, too. Ranking them would be:

We actually went to sample their Paella ???? and so will definitely return for more.
Have to commend the (I am assuming, and forgive me if I got it wrong), Chef, who came out to serve the Pulpo. Albeit, a quick minute but, graciousness and a nice smile sure goes a loooong way.

Amazing! The staff is amazing, the food is amazing, the wine is amazing. The ower has really put a lot of time and thought into the menu, the flavors and textures were spot on. This is hands down one of the best restaurants I have eaten at since being in Denver. It is served tapas style so be prepared to pay a bit more for the food, but the quality makes it worth it. The wine is also great, hand picked selection of spanish wines. They also offer a great assortment of cocktails if wine is not your thing. They were also very accommodating to my food allergies, and went out of their way to have food modified as needed. They continuously reassured me that my food was modified to suit my needs and even made me a special sauce.
Fantastic service and good food! I was so excited to see this place pop up after going to Spain a couple times in the last few years. My husband and I have gone here two times since they opened. We’ll definitely go back, but for us, the seasoning on the food is not quite there. It’s reminiscent of Spanish tapas and paella, but it doesn’t quite satisfy my craving for Spain.

It was good but not great. Friendly staff but there’s room for improvement. Cocktails were mediocre and dishes where lacking flavor. The presentation was there and atmosphere was great. Just no wow factor…
