Best WLM Reviews
I have long desired to experience dining at Carbone. After securing a reservation, my expectations were set high. Unfortunately, the service fell short and significantly detracted from the overall dining experience. Despite anticipating exceptional flavors from the renowned rigatoni dish, we were presented with rather average taste profiles that could easily be replicated at home. While it was an interesting experience, I do not plan on returning and caution others who share my initial excitement to temper their expectations before dining at this establishment.
We had a great dinner, the food was good, the atmosphere was good, but the service was lacking on the server, they took a very long time and they didn’t come to the table, our “helper” his name was Ian, he was absolutely fantastic. He continually made sure we had enough water, cocktails, and bagged our food. Our server was so non-existent we don’t even know his name.
I had higher hopes.
The service and atmosphere were amazing. The eggplant Parm was a huge hit and a perfect family meal. The spicy rigatoni did not disappoint. The Funghi fettuccine was tasty but I didn’t feel it was anything special.
This is a fancy Italian steakhouse tucked in the Aria that will require a reservation if you don’t plan to wait.
The service and food are exceptional, but based on the price you’re paying, it better be!
Their Tomahawk even has their name seared into the bone, which was a nice touch.
Drinks were well made and overall food was delicious. The steak was well made, and the pasta was cooked perfectly. Can’t complain about the food or drinks at all!
Only complaint I had from my visit was the washrooms had flooded earlier and weren’t fixed. It was quite a trek to get to the nearest public washroom close to the restaurant.
One of the more difficult reservations in Las Vegas but, we had a mixed experience. It's a beautiful space and we were seated in a cozy booth. Ordered a champagne and a mixed drink and the waiter opens the champagne which explodes all over the floor and our table. So, off to a rocky start.
They start by cutting some parmesan cheese off a block as an amuze while we ordered our drinks and reviewed the menu. After ordering we got, complimentary, a delicious bread basket, spicy salami, and pickled cauliflower. They were all great.
We ordered a table-side Caesar and a lobster salad. The lobster salad was amazing but presented without any explanation. They table-side Caesar was prepared in silence and served "family style" (ie they didn't split it). Another pet-peeve is that they didn't cut the lettuce so, we got the full leaves. And, it basically came out at once. So, at this point with the four amuze(s), cocktails, two appetizers, and wine now on our cozy table, it became impossible to navigate. We had to ask to slow the pace down so we could actually enjoy our meal.
For the mains, we got the signature spicy rigatoni and veal parmesan. They were both very delicious and worth the hype. For dessert we got the carrot cake which was just okay followed by complimentary rainbow cookie.
Overall, the food was great but the service failed to live up to the reputation, quality, and expectation of a restaurant of this caliber. Other than the Somm, service was either in silence or brusk/perfunctory, thus the reason for 3-stars.
Amazing experience from start to finish. Very kind host staff. I was lucky enough to sit at the bar and had Nick the bartender take care of me. You’re greeted with Parmesan baked bread and pickled vegetables. I ordered the carpaccio which was incredible. And had the staple spicy rigatoni and meatball. I would definitely go back. Must have reservations. Plan ahead and enjoy yourself. I’ll be back next time for the pork chop. Mando as well is an incredible server. Thank you guys for everything!
Located on the second floor of the Aria, I visited this restaurant with a few friends and we made sure to reserve ahead of time, as it's quite popular. We had high expectations, comparing it to its sister restaurant in New York. As soon as we stepped in, we were impressed by the overwhelming ambiance and design. The open space and well-spaced tables allowed for a pleasant dining experience where we could see and be seen.
We decided to order and share as many dishes as possible, including the famous spicy vodka rigatoni, tortellini al ragu, puttanesca spaghetti, veal parmesan, and Dover piccata. While the most popular dishes aren't always the best, overall we weren't disappointed, except for the veal parmesan, which was a bit soggy in my opinion. The standout dish was the tortellini, rich in flavor and perfectly cooked. Surprisingly, the rigatoni, their best seller, didn't leave a lasting impression on my taste buds.
Be prepared to spend around $120 per person on average excluding alcohol.
Carbone is a dining experience. You'll want to make sure you have reservations and ensure you have about 2 hours available for dining. The staff is incredibly friendly and attentive. The food is all very good but that beef carpaccio is life changing. The balance of that dish is pure perfection. I cannot stress enough that it alone is worth the price of admission and I'd order it again in a heart beat. The spicy rigatoni and veal Marsala were both great.
